Veggie Loaded Beef Nachos | 25 Mins

This is a very clever and fast way to hide a whole lot of veggies and fibre between layers of (good quality non-GMO) corn tortilla chips and cheesy goodness... and they'll never know! Our wholesome take on an all-time favourite; layers of corn chips, perfectly seasoned beef mince, black beans, roasted cauliflower (just trust us), tomatoes, and red onion, baked with cheese and topped with zingy guacamole, sour cream, and fresh coriander. 

This is a highly customisable recipe so no need to run to the shops first, work with what you've got and get creative!

SERVES 2 Main / 4 to 6 Snacks 

Time: 25 to 30 Mins

INGREDIENTS 

  • 300g Lean Beef Mince
  • 1 tsp Spanish or Mexican Seasoning ... (A little mix of Smoked Paprika, Brown Sugar and Braai Salt will do the trick too!)
  • 1 Cup Cauliflower (rinsed, finely chopped) 
  • ½ Cup Passata
  • ½ Cup Black Beans
  • 1 Large Tomato (rinsed, finely diced)
  • 1 Small Red Onion (peeled, finely diced)
  • 1 Lemon (rinsed, cut to wedges)
  • ¾ Cup Grated Cheese
  • 90g Nachos 
  • 1 Avo (peeled, mashed)
  • 1/3 Cup Sour Cream 
  • Coriander Sprigs (rinsed, roughly chopped)

METHOD

  • Preheat oven to 180C.
  • Chop cauli finely. Toss with olive oil on a baking tray. Season with S&P. 
  • Place in oven for +-7 to 10 mins until soft & browning.
  • While cauli cooks, cook mince with seasoning. Brown well for +- 5 mins. Then add beans, passata & a few splashes water.
  • Cook for another +-5 mins.
  • While mince cooks, finely dice tomatoes and onions, roughly chop coriander. Cut lemon to wedges. Set all aside.
  • Arrange nacho chips in a single layer on an oven proof platter.
  • Top with mince & black bean mix, then onions, roasted cauli & tomato.
  • Sprinkle evenly with cheese. Place in oven until cheese is well melted.
  • Top with home-made guac and a few dollops of sour cream, then scatter with chopped coriander and garnish with lemon wedges. 

TIPS

You can substitute the cauli here for almost any veg!

Swap out the beef mince and passata and load up on cheese and guac, and you've got yourself a truly delish braai side, ready in 15 minutes. (See image below: braai-side veggie nachos)
