Honey Soy Citrus Pork Stir-fry | 25 - 30 Mins

Eat the rainbow! Fresh veggies with tender pork fillet slices, tossed with (the star of the show)...a 3-ingredient citrus and honey-soy stir-fry sauce, all served on a bed of hearty egg noodles and finished with fresh coriander. You can put this stir-fry sauce together from scratch in the same time it will take you try and pronounce the ingredients on the packet sauce from the store!

Hello Supper Recipe_Honey-soy-citrus Pork Fillet Stirfry 

INGREDIENTS:

  • Pork Fillet Strips (+- 300g) ...Or Chicken 
  • Citrus Honey-Soy Sauce
    • 1/3 cup Orange Juice
    • 3 TBS Soy Sauce,           
    • 2 TBS Honey
    • Mix with 100ml boiling water
  • 2 Handfuls Shredded Red Cabbage  
  • 2 Segments of Egg Noodles (+-100g)
  • 1 Small Carrot (peeled, cut to thin strips)
  • ½ Green Pepper (rinsed, cut to strips)
  • Small Handful Mangetout/Green Beans
  • 1 Small Onion (peeled, diced)
  • 1tsp Oriental / Thai Spice (Optional) 
  • 1 Garlic Clove (peeled, finely chopped)
  • Coriander (rinsed, roughly chopped)
  • 2 tsp Cornflour (mix with 2TBS cold water)

INSTRUCTIONS: 

STEP 1

  • Boil noodles.
  • Prepare the veggies...Cut peppers into strips, roughly chop coriander, julienne the carrots, finely chop garlic, dice the onion, shred cabbage.
  • Set prepped veg aside.

STEP 2

  • Heat a wok / deep pan with a little oil. Add pork, season well & cook for +- 5 mins.
  • While pork cooks, in a bowl, combine orange juice, honey & soy sauce with 100mls boiling water. Taste and adjust ratios as desired.
  • After 5 mins, remove the strips from the pan and set them aside, keep pan unwiped.

STEP 3

  • In the unwiped pan, heat a little more oil & add onions, garlic & carrots. Cook until onions are transclucent, +- 3 mins.
  • Now add cabbage, green pepper & mangetout/beans. Season well.
  • Cook for +- 4 mins or until veggies are tender but still bright and crisp.
  • Now stir in the citrus honey-soy sauce & add the pork strips back into the pan.
  • Mix cornflour with 2TBS cold water & add to the pan - stir well & allow to thicken slightly for 2 minutes. Turn off the heat.

STEP 4

  • Divide noodles between bowls & spoon over the stirfry. Garnish with chopped coriander. Serve!

TIPS AND SUBSTITUTES: 

  • Swap out noodles for basmati rice, or simply bulk up on the veg and sauce, and skip the carbs completely.
  • Mange tout is seasonal and can get pricey, choose beans for a more economical option.
  • Swap pork fillet for chicken breasts, or simply go meat free and bulk up on the veg – you wont regret it. 
  • Use the veg you have....apart from the cabbage which adds good bulk, all the other veg is fully customisable.
  • Add 1/2 tsp of fresh minced ginger if you have some on hand.
